Sugar

Our classics

Sugar is a valuable commodity and an essential one. As sugar buyers and refiners with many years of experience and clients all over the world, we are very familiar with this sweet natural resource and we know exactly what counts in every product, whether crystal or liquid.

Granulated sugar can be made from either sugar beet or sugar cane. Our wide-ranging portfolio offers you both, and they come in many different varieties.

Liquid sugar is amazingly diverse: There are non-invert solutions, partially and fully inverted varieties, and blends. When we compose these blended syrups, we adjust them exactly to your product requirements. Simply tell us what you have in mind. We are happy to support you with strategic product development and can create a special syrup just for you.

Among our specialities we have a diverse portfolio of specially designed products. These include caramels in liquid and solid form, fondant and caramel colours, but also products tailored to meet your specific requirements. We supply specialities produced by our own associates or by long-standing partners.

Beet sugars

White sugar

White sugar (EU category 2): this very pure, high-quality sugar consists 99.9 per cent of crystalline sucrose. Sugar varieties differ in colour and taste. It is vital to understand the qualities of each when choosing the right one to use in a food product. The paler the sugar, the lower the mineral content and the purer the content. Finer granules dissolve faster in aqueous solutions.

Refined sugar

White sugar of especially high purity is called refined sugar. Like white sugar (EU category 2), refined sugar (EU category 1) is obtained from sugar beet.

Nib sugar

Nib sugar is a coarse sugar produced by adding moisture to conventional sugar, pressing and drying it, then crushing it to the size of pearls or small hailstones (accounting for its name in some countries). The coarse grain of nib sugar is actually made up of lots of little crystals compressed together. It is used as decoration – for example with cakes, biscuits and confectionery.

Powdered sugar

Powdered sugar is made by milling refined white sugar. It is so finely milled that it takes on a texture like dust or powder, hence the name. This more finely granulated product dissolves faster in aqueous solutions. Powdered sugar is ideal for caramelising. If you warm chopped almonds or nuts in a pan, for example, and sprinkle them with powdered sugar, you will see them turn golden brown.

Cane sugars

White sugar

White cane sugar tastes no different from the white sugar derived from sugar beet, so it lends itself as a 1:1 substitute in the final product. Semi-white sugar (colour <150 IU) can also be bought at more competitive prices. White cane sugar for the European market is processed to meet the criteria for EU Category 2.

Demerara

Demerara is a generic term for a special type of cane sugar. The crystals range from small to big and the dark colour is due to the molasses content. The “demerara” concept has been greatly influenced by Mauritius in recent years, although this sugar now has many countries of origin.

Product specifications
Golden caster

Golden caster is a fine sugar with a flexible range of uses. It dissolves quickly in drinks and pastry mixtures and is a valuable addition to culinary delights both sweet and savoury.

Turbinado

Turbinado is a pale brown cane sugar with a low molasses content. The granules are usually smaller than in demerara sugars. This variety has a finer look and taste with a hint of caramel and honey.

Dark muscovado

Dark muscovado is a dark, unrefined whole cane sugar with a marvellous aroma. Muscovado is made without any chemical processing straight from pure cane juice, which is filtered, gently thickened, dried and milled.

Panela

Panela is a much-loved traditional product in Colombia. This is whole cane sugar. Panela is made using a very different method from refined white sugar. The sugar cane is harvested by hand, then pressed to extract the juice, boiled down and left to cool. After this process the sugar literally crumbles into a fine, shiny brown texture.

Powdered sugar

Finely milled cane sugar is perfect for sprinkling on waffles, cakes and biscuits and also for icing.

Liquid sugar

Liquid sugar

Liquid sugar is crystal sugar dissolved in water with a dry mass of about 66.5%. It is a useful ingredient wherever liquid sugar offers advantages over crystal sugar, as it cuts out the costly, time-consuming need to dissolve the crystals and the sucrose spreads quickly and efficiently through the product. This makes it a popular choice in the beverages sector, in OTC products and in gourmet foods.

Product specifications
Invert sugar syrup

The advanced version of liquid sugar. The sucrose (disaccharide) is dissolved in water and then split by hydrolysis into glucose and fructose. This process, known as inverting, intensifies the sweetness compared with standard liquid sugar, while the microbiology of invert sugar syrup is up to 80% more stable because of its high dry mass content.
Did you know that 1 kg of invert sugar syrup is just as sweet as 1 kg of granulated sugar but with 100kcl less per 100 g?

Applications:
Throughout the food industry, and especially in the beverages sector, invert sugar syrup is the top choice for combining a sweet taste with optimum processing qualities. Quickly absorbed, clean to handle and sweeter than crystal sugar in a direct comparison.

High-fructose syrup

Our high-fructose syrup is derived either from sugar beet or from wheat or maize (corn). The fructose content is at least 95% with a dry mass of about 70%. High-fructose syrup has a higher sweetness value than sucrose. It dissolves easily and tends not to crystallise out even at low temperatures.

Product specifications
Special blends

For reasons of quality or cost, some products may need an extra addition of sweet syrup, such as a glucose syrup. We can supply you with customised blends, saving you the trouble of making these compounds yourself and having to store two or three different syrups on your premises. We are happy to do this for you, guaranteeing a consistent blend at all times. We can also liquefy crystal forms, such as dextrose, on your behalf, so you don’t need to handle sacks or big bags.

Applications: beverages and bakery products, but also other fields of use.

Fondant

Fondant

Fondant is prepared from water and sucrose together with glucose syrup, invert sugar paste and sugar alcohols. The mixture is boiled and then thoroughly kneaded and rapidly cooled to make a soft paste. The supple sugary mass can be moulded, so it lends itself to rolling, cutting into shapes and modelling. It provides the base for fillings and coatings.

Caramel

Caramel syrup

Caramel syrups are made by heating sugar and/or sugar products without using additives. They are highly aromatic, sometimes with a bitter edge. Caramel syrups are used in foods and beverages to enhance taste or underpin claims and can also be used as food colouring, e.g. instead of caramel colour.
You can also order our caramel syrups in powder or granule form. We can add constituents of milk at your request.

Product specifications
Caramel granules

The granules are useful as an additive in chocolate couverture or as decoration for desserts and ice cream. They are hygroscopic and heat-sensitive.

Caramel powder

A classy addition to ice cream, coffee or fresh fruit. Very light and airy, but with oodles of taste.

Caramel colour

Food colouring

Sugar-based colourings are derived from sugar and/or sugar products with the aid of reactants. They are used in a variety of ways to achieve a strong brown colour in food and beverages where the colouring effect of caramel syrup often has limits. The burnt taste is bitter rather than sweet. These colourings are declared as E-numbers.

Applications: beverages, confectionery, cold meats and spices

We can also supply our colourings in powder form on request.
